CONCENTRATE FORMAT: 1 kg makes 11 kg OF READY BREADING - This is not a ready-to-use flour. Mix 1kg of this concentrate into 10 kg of plain maida and blend well. This 1kg pack makes 11kg of complete, seasoned breading - enough to coat 150- 180 kg of marinated chicken. No additional salt, spices, or flavouring needed
SPICE + CRUNCH + COLOUR IN ONE MIX - Delivers three things simultaneously: bold Cajun heat from chilli and smoked spices, a crispy crunch and golden colour on frying. Double-coat for extra crust. Works on chicken pieces, wings, fish fillets, paneer, and vegetable fritters
STEP 2 OF MAKING FRIED CHICKEN - Marinate using EL The Cook Hot & Spicy Marinade Mix. After marination, dip pieces in ice water. Coat each piece in prepared breading, re-dip, re-coat (double coat) and deep fry at 170175C until golden. The breading activates on contact with heat giving the crust a light, crispy finish rather than a dense coating.
HIGH MARGIN, LOW WASTAGE - 1kg concentrate reduces effective breading cost and combined with the EL The Cook marinade system, the total ingredient cost per kg of finished fried chicken stays low. Store cool and dry. Always use a dry spoon.
